Infant learning activities are vital to growth and development in the first year. Babies build cognitive, motor, language and social-emotional skills through play and interaction, which are essential for future learning. While caring for an infant can feel demanding, taking time to engage in various learning activities makes a significant impact on development.

Research shows that active learning directly shapes brain development during the first 3 years, more than any other period in life. Neural connections form through repeated sensory experiences and social interaction. Simple learning activities stimulate all developmental domains and pave the way for more complex skills. They also strengthen the nurturing bond between parent and child.

Stimulating learning activities for infants

This article outlines 10 fun, stimulating learning activities for infants 0-12 months. Try incorporating them into your daily routine for well-rounded learning. Remember to be responsive, provide sensory stimulation, encourage exploration, and engage face-to-face.

1. Tummy Time

Tummy time helps strengthen neck, arm and core muscles needed for rolling over, sitting up and crawling. Lay your baby on their stomach on the floor for a few minutes, increasing time as they gain strength. Place toys in view to motivate them to lift and turn their head, build peripheral vision and coordination. Avoid too much unsupported time to prevent flattening of the back of the head.

2. Tracking Objects

Hold colorful toys or objects 8-10 inches from your baby’s face and slowly move them around for them to visually follow. Track left to right, up and down, close and far. You can also create a homemade mobile with dangling toys. Tracking builds eye muscles and hand-eye coordination. Talk to your baby as they follow to promote language connections.

3. Mirror Play

Let your baby discover faces, expressions and self-awareness through mirror play. Hold an unbreakable mirror for your baby to view themselves and communicate. Smile, stick out your tongue and notice if they imitate your movements. Point out body parts like nose, eyes and hands. Mirror play builds self-awareness, cognition and language skills.

4. Grasping, Reaching and Holding Items

Develop motor skills and coordination by placing toys within reach like soft blocks, rattles and teethers. Encourage grasping, reaching, holding, shaking and passing from one hand to another. Place toys on activity mats or hold one while your baby grasps another. Touch various textures to stimulate sensory development too.

5. Peekaboo

Peekaboo stimulates cognition, emotions, language and social skills. Cover your face or hide a toy, then reveal it while saying “peekaboo!” Repeat, increasing the time your face is hidden. Watch for your baby’s reaction and say the name of the emotion: “You look so surprised!” or “You’re happy to see mama!” Use family member names for fun familiarity.

6. Sing Songs and Rhymes

Expose infants to language and literacy by singing short songs slowly with gestures, like “Twinkle Twinkle Little Star” and “Pat-a-Cake.” Read rhyming books together, pointing at pictures and objects. Sing lullabies before naptime. Use actions like rocking and clapping to engage different senses. Repeat favorite songs consistently.

7. Explore Safe Household Items

Allow supervised exploration of safe household items with various colors, textures, shapes and purposes. Items like soft sponges, plastic bowls and wooden spoons interest babies. Name each item as your baby grasps and manipulates them. Watching how you use them promotes imitation and cognition. Avoid small objects that can cause choking.

8. Simple Picture Books

Reading develops language, listening skills and eventually early literacy. Choose sturdy board books with large, high-contrast or real-life photos. Point out and name pictures on each page in a gentle voice. Run fingers along words as you read. Allow tactile exploration too. Avoid long stories which distract infants – focus on single images with labels.

9. Listen and Dance to Music

Play rhythmic classical or lullaby music. Hold your baby and slowly sway, dip and rock to build muscles and balance. Observe your baby’s reactions – are they excited and alert or calm and soothed? Talk or sing about what you see. Interactive movement, music and language together stimulate brain activity.

10. Water Fun

In the bath or pool, allow splashing, pouring water between containers and squirting bath toys. Name body parts, demonstrate pouring, and talk about “wet” and “dry.” Water play teaches cause-and-effect thinking, problem solving and early science concepts. Bath time also encourages bonding through gentle touch.

Regularly engaging in a mix of sensory, motor, language and cognitive infant learning activities nurtures overall development. Simple games and interactions build brain connections for more complex learning ahead. While playing with your baby may feel routine, you are positively impacting their growth in big ways.

Narrating activities, naming objects, singing songs and reading books exposes infants to a rich language environment.

6. Social play:

Interacting with teachers and other infants, playing side-by-side promotes essential social-emotional skills.

7. Outdoor time:

Going outside provides a change of scenery and exploring a different environment.

The variety of learning activities across developmental domains in an infant daycare program stimulates rapid growth in the first year of life. The social experience also introduces essential skills.

Why Choose an Infant Care Program

While you can engage your baby in learning activities at home, an infant care program at a high-quality daycare provides immense developmental benefits you may not access alone. Here are key reasons to choose an accredited infant childcare center:

1. Expert Teachers:

Daycare teachers are trained in early childhood education with expertise in age-appropriate learning activities tailored to infants. They introduce new sensory experiences and social interactions infants may not get at home.

2. Socialization:

An infant classroom allows socialization with other babies and caregivers, building communication and emotional skills essential for development.

3. Routine:

Full-day programs provide a consistent schedule of play, learning, meals and sleep to support growth.

4. Facilities & Equipment:

Centers have safe developmental toys and equipment like soft climbing structures, mirrors, play mats, peekaboo walls and more.

5. Learning Variety:

Trained teachers rotate infants through different learning activities – art, music, sensory play, outdoor time, etc. This develops the whole child across all domains.

6. Communication:

Teachers communicate daily about your baby’s activities, mood, eating and sleeping. They also share observations about developmental milestones.

While parents lay the early foundation, daycare infant programs provide supplemental sensory experiences vital for cognition, motor skills, language and social development. The variety of learning activities and social engagement exceeds what a single caregiver can offer at home.

The advent of the internet and electronic devices has changed the way kids play. Nowadays, many children would rather stay indoors and play video games or watch TV than go outside and play. While there are benefits to playing inside and using technology for learning and entertainment, too much screen time and a sedentary life can be detrimental to health. This is where the importance of outdoor play comes in. So, what are the benefits of outdoor space for young kids?

From improving their physical health to boosting their creativity and social skills, here are eight reasons why playing outside is suitable for your child.

Outdoor play helps children stay physically active and healthy

Physical activity is crucial for children’s health and well-being. Outdoor play provides plenty of opportunities for kids to get moving. Whether they are climbing trees, running around in the park, or swimming in a pool, physical activity during outdoor play benefits kids’ health. It helps them maintain a healthy weight and strengthens their muscles and bones. It also reduces their risk of developing chronic diseases such as obesity and diabetes and improves overall fitness.

Outdoor play helps children develop strong bones and muscles

Playing outside also helps children build strong bones and muscles. When physically active outdoors, they use all the major muscle groups, including their arms, legs, and abdominal muscles. In addition, the outdoor play exposes kids to various terrains that help them develop balance and coordination. This is important as it helps them stay safe when participating in other physical activities later in life.

Outdoor play helps children regulate their energy levels

Children have a lot of energy, and it can be hard to keep them occupied indoors. Outdoors, they can run around and expend all that pent-up energy. Not only does this help them stay physically active, it also allows them to calm down and relax after moments of excitement or stress.

Outdoor play benefits children’s mental health

Just like adults, children also need time to relax and de-stress. Outdoor play allows children to connect with nature, which has been shown to benefit their mental health. Spending time outdoors in the fresh air will enable children to escape the distractions of technology and the city. It also fosters a sense of calm and tranquility. This can help them deal with stress better, improve their moods, and boost overall mental well-being.

Outdoor play helps children develop creativity and imagination

One of the best things about outdoor play is that it offers children a never-ending source of imaginative possibilities. From riding bikes to playing tag to building sandcastles on the beach, there are endless possibilities for creative expression when kids are outdoors. This helps children develop their creativity and imagination, which can benefit other areas of their lives, such as academics and arts.

Outdoor play helps children learn about the world around them

When children are outdoors, they are exposed to various new things that they can learn about. This includes nature, animals, different cultures, and how to interact with others. By exploring their surroundings, they can learn about the world hands-on. This can help them become more curious as they grow up.

Outdoor play teaches kids how to socialize with others

Another benefit of outdoor space is that it allows children to date. They can meet new friends, bond with siblings or classmates, and learn how to cooperate and work together. This is an important skill they will need, especially as they grow older and gear up for the real world.

Outdoor play helps children develop a sense of independence

When kids are outdoors, they often have to figure things out. This can help them become more independent and self-reliant. They may also learn how to deal with difficult situations independently, which can be beneficial when they face challenges later in life.

Playing outside is an excellent way for children to exercise, learn new things, and have fun. Not only does it benefit their physical health, but it also helps boost learning and overall development!

Have you sought an engaging learning environment that builds your child’s character, provides a solid foundation of values, and prepares them for the future? Launchpad Early Education is your best choice.

Play is an essential and often overlooked component factor of healthy early childhood development. Play presents the most natural opportunities for children to learn and grow. When children interact and exercise their imaginations, it has a positive impact on the development of social skills, emotional intelligence, creativity, and physical health. Play also plays an important role in terms of children’s school readiness. These activities help kids develop vital social skills (such as sharing and cooperation) and cognitive skills (like thinking creatively and solving problems.) Here, we will discuss seven benefits of play when it comes to children’s school readiness.

1. Play enhances cognitive skills

In terms of cognitive development, play greatly enriches a child’s creativity, problem-solving, and abstract thinking. According to the Smithsonian Institute, “Play encourages learning through exploration, discovery, investigation, and experimentation.” The more spontaneous the type play is, the greater the opportunity for learning. While more structured play at school may present opportunities for kids to learn about letters or numbers, it doesn’t offer as much educational value for youngsters who haven’t yet developed school-readiness skills. At this point in their lives, they benefit more from “open-ended” toys that allow them to practice thinking creatively and solve problems on their own.

2. Play strengthens social skills

When children play, it also helps them develop essential social skills, like sharing, taking turns, and cooperating with others. Dr. Holly A. Pratt, a school psychologist in the K-8 Program at Florida Atlantic University for High School Students asserts, “During playtime, toddlers get the opportunity to learn how to negotiate, resolve conflicts, problem solve, and communicate their feelings and emotions… They also practice empathy when playing with other children.”

3. Play enhances creativity

Creativity is an important school readiness skill that may not come easily for some kids as much as others, especially younger children. That’s why it’s so important for children at this age to play with open-ended toys that allow them to explore freely. “Play is important because it unlocks imagination and stimulates creativity,” says Dr. Pratt. According to the National Association for the Education of Young Children, there are many ways children exhibit creativity during play. They might mix colors, or combine shapes to create new ones. Kids may pretend that a chair is a spaceship, or a couch is a school bus.

“Parents should look for toys such as blocks, building sets, art supplies, dress-up clothes, and generic household items (like cardboard boxes) to encourage their child’s creativity,” says Pratt.

4. Play enhances emotional intelligence

One of the most important skills that all children need, both in and out of school, is emotional intelligence (or “EQ”). Social and emotional skills are the building blocks that help kids learn how to effectively manage their emotions as they face life’s challenges. A large component of one’s EQ is self-awareness, which refers to one’s ability to understand how we feel and express those feelings in a productive way. According to Dr. Pratt, engaging in play helps kids practice this crucial school readiness skill.

5. Play boosts self-esteem

Children’s self-esteem is often linked to academic performance. However, the formation of self-esteem actually starts during early childhood, even before school begins. “Much of children’s school success hinges on their ability to develop healthy self-esteem,” says Neel Burton, M.D., author of Heaven and Hell: The Psychology of the Emotions. Kids with low self-esteem lack confidence. They may withdraw socially or act out aggressively (verbally or physically).

“During play, children learn what they’re good at and how to make the most of their strengths,” says Dr. Pratt. It’s not about being better than others or competing with friends. It’s simply understanding that you have value. “When a child discovers that he enjoys certain activities, such as drawing or dancing, it builds his confidence knowing that he can succeed in school when given the opportunity,” adds Dr. Burton.

6. Play boosts has a positive impact on overall school success

According to a study by researchers at Yale University, the more school-readiness skills a child has acquired before attending school, the better his or her academic performance will be in the future. The research found that these skills, which include creative thinking, social skills, emotional intelligence, and being active, were all linked with higher reading and math test scores among third graders. According to Burton, school readiness doesn’t just give kids an academic advantage over their peers, but also prepares them for life as. “The ability to think creatively is not only crucial in school but also important in the workplace.”

Engaging in regular play gives children plenty of opportunities to learn important skills and increases their school readiness. Let children explore, be creative, get physical, and discover their own school-readiness abilities, all while having fun.

Does your child show symptoms of restlessness, irritability and extreme boredom after being cooped up indoors for several days? They might be experiencing cabin fever. Cabin fever is a common reaction to being confined or isolated over a long period and it can occur to both children and adults alike. It can be a result of various triggers. The implementation of self-quarantine in the wake of this pandemic is one good example.

If you observe that your little one is experiencing cabin fever as a result of the lockdown and social distancing, know that you are not alone. And there’s no need to worry. There are several ways to help them cope. Read on and learn some helpful ideas for how to beat cabin fever!

Maintain a healthy diet

For many of us, staying at home for extended periods is an excuse to overindulge in comfort food. That often means binging on more unhealthy and junk food. However, this doesn’t really help and may just do more harm than good in the long run especially for kids.

To help increase their energy levels, make it a point to serve a balanced meal every time. Stay on top of your child’s eating habits. Make sure that they still get the nutrients they need. Control their intake of sugar and encourage drinking plenty of water.

Get them busy in the kitchen

Kitchen activities are always fun and exciting for kids. These are also excellent for beating cabin fever. And now that your kids are home, this is the best time to carve out time for prepping and cooking meals!

There are plenty of fun, kid-friendly recipes you can use for your child to replicate. If they’re into baked sweet treats, perhaps you can encourage their involvement in making mini cupcakes or cookies. Then let them decorate according to their liking. Pizza is also a good idea! Or you can ask them for suggestions if there’s anything they want to cook as part of your meal for dinner.

Exercise

Getting stuck at home for days and weeks may entail less physical activity for the family but it doesn’t mean that you have to live a sedentary lifestyle. Even if you can’t leave the house, you can still find ways to stay physically active. Shave off the extra energy you have from being cooped up inside and do a workout together. Check tutorials on YouTube for simple workout routines that even kids can follow. They don’t have to be high-intensity workouts. Even the ones that allow you to stretch some muscles will do!

Play fun indoor games

Find working out and exercise a bit boring? Indoor games are a perfect alternative to keep moving while having fun!

There are plenty of indoor games your kids can play inside the house to keep them entertained. Some examples would be indoor obstacle course, scavenger hunt, indoor bowling, hide and seek, and a lot more!

Create arts and crafts

School closures are an excellent time for your little one to channel their inner artist through arts and crafts! Art activities are also a good way to beat boredom while they’re home. So, bring out the art materials and let them start working on a masterpiece! Have them work on recycled materials such as old newspapers and plastic bottles. Hand them over the watercolor, paint, crayons and other tools they may need. Allow their imagination to run wild and have them create a masterpiece from scratch. But if they’re running out of ideas, you can always tap into the internet for more helpful resources.

Teach them household chores

The sound of household chores may not seem like a lot of fun for kids. But with a little creativity, learning household chores can be a productive way to beat cabin fever and have fun at the same time! For example, you can create a chart for your child to fill in with stickers each time they finish a task. Then, the accumulated stickers can be used to claim a prize – anything that can turn the activity into a fun game will do!

It might get you worried to see your little one suffering from anxiety or irritability due to isolation. But with the help of these ideas, you can help your little one beat cabin fever with activities they’ll enjoy!

Having fun as a family is an integral part of a happy and healthy child development. Not only does it help form happy childhood memories but it also builds a strong child-parent bond that lasts a lifetime. It is also during these fun family bonding opportunities that lasting traditions are created. Whether you plan an out-of-town-trip or have movie marathons at home, what’s important is making the most of your free time together as a family. Make it a weekend tradition to spend time and do something exciting together. If you’re running out of ideas, here are some fun things to do with kids on the weekends.

Have a picnic at the park

How often do you bring the entire family out for a picnic? Going out to a nearby park or beach to spend time quality time doesn’t have to cost a lot of time or money. There’s no need to travel far from home to enjoy the outdoors together. It’s time to grab the picnic basket and table cloth and prepare some fun and delicious snacks for everybody to enjoy! Don’t forget to pack some fun games, too!

Visit to the zoo

Is there a local zoo you can visit with the kids on the weekend? Don’t let the chance pass you by. Make plans to take the youngsters on an exciting trip to the zoo. Not only is this a fun activity but it’s also an excellent way for children to learn more about animals. Visit all different animal exhibits and test your kids’ knowledge. If there are sections that allow children to pet animals, give them the chance to do so. Sit with your kids and listen to lectures or join the guided tours so everyone in your family can learn more about animal behavior, their habitats, and lifestyle.

Go out to eat

While having delicious meals at home is an excellent way to bond with the whole family, there’s nothing wrong with taking your family out for dinner once in a while. It can be exciting to try sumptuous dishes at a newly opened restaurant nearby! Or maybe your family can try a different cuisine you haven’t eaten before. Explore new cultures as a family by having Japanese or Thai dishes, perhaps. Or maybe you are into Italian food and you might want to indulge in a new pasta recipe at your favorite restaurant.

Go camping

Whether you want to go camping at a campsite in the woods or right in your own backyard, camping is a great activity you can do with your family during the weekend. Get the tent up and get the marshmallows ready for roasting as you tell ghost stories around the campfire. Grill hotdogs and corn cobs and light up a portable torch or flashlight. You can also make a night of camping more fun by playing games. Before everybody goes to sleep, you can lay the sleeping bags on the grass, gaze up at the stars and marvel at the beauty of the night.

See a new movie

Rain or shine, here is a way to make bonding time fun for everyone. No matter the weather, your can always enjoy watching a movie together. Pick a movie that’s entertaining and enjoyable for everyone. You can go to the cinema or watch a movie at home. So sit back and relax, get yourselves comfortable, and don’t forget about the popcorn!

Cook together

If everyone in the family loves to eat, do they also love to cook? Cooking and preparing meals together is another excellent way to bond with the family. Not only does it bring you closer, but it also provides a perfect opportunity for young kids to learn about eating healthy. Squeeze in a few lessons about the importance of healthy food choices. Choose recipes that are delicious and nutritious at the same time. Give everyone tasks in the meal prep process to make sure each family member is involved. You will be happy with the results if you’re able to work together as a team.

Enjoying the weekend with the family doesn’t have to be challenging. There are so many fun things to do with your kids so you can bond and spend quality time with each other, and these are just a few you can try!

In today’s times when children of all ages are technologically savvy, it’s becoming more and more challenging for parents to take their kids away from screens. Instead of engaging in fun outdoor activities for kids, most of their free time is spent watching TV, playing video games or watching YouTube videos While technology can be useful for children in several ways, too much screen time can be detrimental to their overall growth and development.

Now that it’s officially summer, it’s crucial for parents to establish outdoor activities as part of their children’s life. Don’t fall into the trap of hibernating indoors to stay away from the sweltering hot weather. This is the best time to bask under the sun and get outside with your little ones. Not only is it an excellent way to bond and connect, but summer activities can also help your kids stay fit and active. Read on and learn more about the best outdoor activities you can try with your child this summer.

Bike parade

Riding a bike around the neighborhood may not be appealing to most kids, but you can make this activity exciting for them by adding a twist. Together with their friends and playmates, help your little one decorate their bike with flags, streamers and stickers. Then, have them go on a bike parade just around your neighborhood while parents and families applaud.

Fishing adventure

Going on a fishing adventure is another great way for your child to enjoy the summer. Take a trip to a nearby lake and teach your child the basics of fishing. Do it on a warm weekend so you can all have fun and relax as a family. It will also teach your child a number of important life skills like patience and determination.

Outdoor scavenger hunt

Who doesn’t love a scavenger hunt? The scavenger hunt is everybody’s favorite game! Be sure not to skip this activity this summer. Not only is it fun and exciting but it’s also a great way to keep young kids occupied. A scavenger hunt can also be turned into a fun learning activity. Incorporate simple lessons and brain-boosting instructions into the game. For example, you can ask them to collect items according to colors and textures. Or, you can help them practice their counting skills by asking them to bring a specific number of items, – e.g, 10 pebbles, 3 pairs of socks, etc.

Arts and crafts class

Does your little have a penchant for making arts and crafts? The summer is a perfect time for them to channel their inner artist! Nurture their gifts and skills by sending them to an arts and crafts class. These workshops offer an extensive range of activities that encourages children’s use of creativity and imagination. They also offer different hands on activities that develop fine motor skills such as painting, coloring books, clay project-making, and a lot more!

Community park activities

When you’re running out of ideas on what to do on a warm summer day, you can simply go to the park. You can bring your own food and enjoy a lazy day with your family. You can also play some games or just let your child run around, play with other kids and embrace the beauty of their childhood.

Beach trip

If there’s one thing children look forward to during the summer, it’s going to the beach. If you’re only a short drive away from the nearest beach, go ahead and take a trip to the beach. It is a fun way to bond as a family and also a great way to get your kids physically active. Also, aside from taking a dip and swimming, the beach is also a perfect place for several other fun activities to enjoy as a family.

Summertime is the best time to be out and about. Don’t let your little ones stay glued to their electronic devices. Encourage them to step outside, have fun and enjoy the outdoors with these exciting activities they will always cherish.

Here at Launchpad Early Education, we believe in the importance of a child’s holistic development.

Don’t look now, but the summer is coming in! It seems like just yesterday, we were bundling up and warming our hands around a mug of hot chocolate. Now it’s time for sunshine, fresh air and warm, lazy days! But let’s face it. Toddlers don’t have much of an attention span. They’re too busy exploring the world around them. They’re used to playing with their friends. And since preschool is out for the summer, that means no more fun activities. Or does it?

How to keep your preschooler entertained through their vacation?

The days of summer should be a blessing for children. And it should mean as much to them as it does to you. Why should the both of you stay cooped up in the house all day when there’s plenty of ways to keep your preschooler entertained during the summer? And entertain yourself, while you’re at it!

There’s dozens of great activities outdoors that both of you can enjoy. From hiking to road trips to fishing… the summer’s yours to enjoy. So make the most of it. Here’s 5 great activities to entertain your kid and get you both out of the house during these hazy months!

Entertain and educate your preschooler through your local library’s summer reading program

Your toddler’s education should be a year round priority. But it should be fun, as well. Your preschooler should look forward to reading, and your library’s summer reading program is the perfect place to both entertain and educate them. Foster a year round love of learning that will last a lifetime by making reading both exciting and social. Not only will reading engage their imagination, but they can share in the learning experience with other kids as well!

Entertain your preschooler with a camping trip… even if it’s only in your own backyard!

Here in Tennessee, we might have the Smoky Mountains and no shortage of national parks. But you don’t have to travel very far to go camping in the great outdoors when you have your very own backyard! Camping is a great way to bond and connect with your kids. You can tell scary ghost stories, make popcorn, roast marshmallows, gaze at the stars… anything they want, all from the comfort of your home!

Your favorite county fair can entertain and engage your preschooler

Did you know there’s over 50 different county fairs located throughout Tennessee? In fact, some of the favorites you remember as a kid are still around and are as lively as ever! Sure, there’s cotton candy, games and rides galore. But there’s also livestock, horseback riding and agricultural shows. County fairs are an awesome way to teach your kids all about what this great state has to offer while having fun, too. And who knows… you may wind up reliving your own childhood!

Amaze and entertain your preschooler with a day trip to the zoo

Lions and tigers and bears, oh my! But don’t forget about the leopards at the Chattanooga Zoo. Or the pandas at the Memphis Zoo. Or the Chattanooga Aquarium. In fact, Tennessee’s home to so many zoos, wildlife sanctuaries, nature reserves and aquariums that it would take all summer to explore them all. Why not pick one or two and make a day trip out of it? After all, when was the last time you spent only an hour at a zoo?

Keep your preschooler entertained by visiting a nearby city

There must be hundreds of nearby towns and cities neither you nor your family have visited yet. Don’t let this opportunity go to waste! Visit local historic sites, restaurants, state parks, amusement centers and more… all within a hundred miles. Stay overnight, or leave late in the day. But don’t let your preschooler miss out on the chance to discover the rich cultural heritage this state has to offer!

Every February 2nd, people celebrate National Tater Tots Day. People dedicate this day to remembering how good bite-sized potato nuggets taste. They savor this treat whose name literally means baby potatoes.

How tater tots came to be?

Tater tots came to life through two brothers, Nephi and Golden Grigg. Aided by their brother-in-law, they began playing with the idea of frozen food. Theym leased a plant on the border of Oregon and Idaho back in 1934.By 1952, they bought the plant and began Oregon Frozen Foods Company. After a number of years, it transformed into Ore-Ida.

To create tater tots, they season potatoes with different spices and bake them into casseroles. This makes tater tots anall-around food. From a meal, side dish, or even a snack, people just keep eating them. They dip it, pop it, or just merely savor its taste.

PREHEAT the oven to 325°F. Season the short ribs with salt and pepper. Heat a large Dutch oven over medium-high heat. Add the vegetable oil and sear the beef on both sides, working in batches. Then remove it from the pot.

KEEP the pot over medium heat, add the tomato paste and cook for 2 minutes. Add the onions, carrots and celery; brown slightly. Add the stout. Turn down the heat to low and reduce the liquid slightly. Place the beef back in the pot and add the beef stock, thyme and bay leaves. Bring to a simmer, cover and braise in the oven until tender, 30 to 40 minutes.

REMOVE the meat from the braising liquid and reserve. Strain the liquid into a saucepan, bring to a boil and whisk in the cornstarch to thicken slightly.

HEAT the oven to 350°F. Wash the potatoes well with water to remove all dirt. Lightly prick the potatoes with a fork and toss with 4 tablespoons vegetable oil and 2 tablespoons salt.

SPREAD the potatoes out on a large baking sheet. Roast until tender, about 1 hour. Remove from the oven and allow to cool to room temperature, about 1 hour. Discard the skins.

CUT the potatoes in half and press the flesh through a baking grate into a large mixing bowl. Season with 2 tablespoons salt and 1 tablespoon black pepper, then fold in 4 tablespoons olive oil.

LINE a half sheet tray with parchment paper and lightly grease with 1 tablespoon vegetable oil. Firmly and evenly, press the potato mix into the tray. Cover with plastic wrap and allow to chill overnight.

CUT the potato mixture into about 1-inch squares. Heat 2 cups of vegetable oil in a shallow fry pan to about 325°F. Carefully place the potato squares into the oil and fry until golden and crispy, flipping as needed and working in small batches so not to crowd the pan. Remove from the oil and drain on a paper towel-lined plate.

Preparation for the casserole

PREHEAT the oven broiler to medium-high. Heat the braised beef in a large sauté pan with the thickened braising liquid, pearl onions and mushrooms. Once hot, add the heavy cream and fold in the truffle paste.

DIVIDE the mixture between 6 metal dishes and top each with fried potato tots. Sprinkle gruyère cheese over the top. Broil until the cheese is melted. Garnish with chives and serve.
